ACA students in Chef Educator Annmarie Chelius’s Advanced Baking Class created a vegan dessert in recognition of World Vegan Day, celebrated Saturday, Nov. 1. The exercise was to help familiarize the students with the ingredients that go into vegan baking.
Georgia Thompson of Port Republic took on the challenge of creating a dessert that incorporated vegan baking and cheesecake using almonds, dates, coconut oil and coconut nectar in her dish. With little experience working in vegan ingredients, she researched vegan chefs online.
