Academy of Culinary Art students, Dorothy Burkett of Hammonton, Jennifer Vocca of Brick and Megan Agren of West Deptford, will compete in the “Ultimate Cup Cake Challenge,” part of the Philadelphia National Candy, Gift and Gourmet 130th Show, Monday, Sept. 8 at the Atlantic City Convention Center.
The trio, representing the ACA, volunteered for this extra credit opportunity through their Classical Confections class, taught by ACA Chef Educator Annmarie Chelius, of Ocean City. With the one stipulation being the cupcakes must include chocolate, the students chose a theme of “Fire and Ice,” with their cupcakes playing on the notion of spicy and sweet. The “fire” cupcake is a Mexican Hot Chocolate cupcake, a chili-spiced chocolate cupcake garnished with brown sugar buttered tortilla strips; and their “ice” cupcake is a Mint Chocolate cupcake, a vanilla cupcake filled with whipped ganache topped with mint Swiss buttercream, and garnished with white chocolate sugarcane candy bark. The first-prize award is $400, second-prize, $250, and third-prize is $150. Winners will be announced at the show on Monday.
